I don't appreciate the fact that only one of the countdowns is visible in the shop when I have a different countdown for each variation. Other than that it's ok it does its job

Yes the plugin allows setting a start and end date so you will have a countdown to the beginning of the sale and one to the end of the sale.
Yes it is possible if you use the shortcode you can find more info about it here.
Unfortunately this is not possible.
No it only works with Simple and Variable products.
Unfortunately there is not the possibility to set them automatically. The plugin purpose is not necessarily connected to the “on-sale dates” since you can set the countdown also to make a product available for a certain number of days regardless of the fact that it is on sale or not.
