No an auction product is an 'Auction product' type just like a 'Simple product' and a 'Variable product' are product types. It is therefore not possible to create a simple/variable auction product as these are all different product types.
Yes you can show or hide the countdown option as explained here and show or hide the end date. Check this page for the settings.
Yes the admin can generate an order after the auction ends.
The plugin uses AJAX and you can set up a time interval to trigger the automatic refresh of the page check out the settings here.

Yes it does. All bids will be shown for each auction. They will include the time and the users’ names. As a matter of privacy the administrator could protect users' names by asterisking them e.g. Anthony will turn into A*****y.
