Cool extension helped me identify the items that had the most profit margin so I'm also using the POPUP extension to advertise them while people are on my site. Only downside: wasn't cheap

In the plugin settings you have the option to include the order fees to the total cost. So if the payment gateway fee is added as a new order item it will be included in the product total cost.
Yes you can easily import all the costs that you’ve set up with WooCommerce Costs of Goods through the related button available in the plugin general settings.
Yes it is possible to filter sales by date by product and by categories. In your case you can easily filter the sales from December and view the products sold during that period of time.
Yes you can set the costs for variations directly from the product edit page.
